Serves: 6-12
  • ¼ cup flax meal
  • ¾ cup of water
  • ½ cup coconut oil
  • ⅓ cup maple syrup
  • 3 cups zucchini, shredded
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 cups brown rice flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¾ cup chocolate chips
  • 1 dash sea salt
  1. Preheat oven to 350°F.
  2. Line muffin pan with tins. Mix the flax meal with ¾ cup water and set aside for 5 minutes. In a medium bowl, mix the olive oil, maple syrup, zucchini and stir in the flax egg.
  3. Next, stir in flour, baking powder, baking soda and sea salt. Mix making sure ingredients are well combined and no flour is left at the bottom of the bowl.
  4. Fold in chocolate chips. Scoop batter into muffin pan and bake for 18 minutes.
