Ingredients
- ¼ cup flax meal
- ¾ cup of water
- ½ cup coconut oil
- ⅓ cup maple syrup
- 3 cups zucchini, shredded
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 3 cups brown rice flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¾ cup chocolate chips
- 1 dash sea salt
Instructions
- Preheat oven to 350°F.
- Line muffin pan with tins. Mix the flax meal with ¾ cup water and set aside for 5 minutes. In a medium bowl, mix the olive oil, maple syrup, zucchini and stir in the flax egg.
- Next, stir in flour, baking powder, baking soda and sea salt. Mix making sure ingredients are well combined and no flour is left at the bottom of the bowl.
- Fold in chocolate chips. Scoop batter into muffin pan and bake for 18 minutes.
