Vanilla Cake with fresh Figs, Blueberries and Chocolate Sauce

Makes 1 9" round cake, or 1 9x5 loaf or cupcakes (not sure how many as we have not tried them)

Ingredients
Cake
- ¼ cup coconut oil
- ¼ cup apple sauce
- 1 Tbsp. flax meal + 3 Tbsp. water
- 1 lemon wedge
- 1 cup vanilla coconut milk (any non-dairy milk will work)
- 2 tsp. vanilla extract
- 1½ cups rice flour (or your favorite gf flour)
- ¼ tsp. baking powder
- ¼ tsp. baking soda
- 1 dash sea salt
- ½ cup - ¾ cup coconut sugar (depends on how sweet you like things. Try to use as little as you can, since sugar is not a health promoting ingredient)
Chocolate Sauce
- 2 Tbsp. cacao powder
- 1½ Tbsp. maple syrup
- 1 Tbsp. coconut oil, melted
- 1 Tbsp. non-dairy milk
Berries
- ½ cup fresh blueberries
- 2-3 large fresh figs
Instructions
- Preheat the oven to 350 Deg F. Line your baking pan with parchment paper (very important).
- Next, mix together flax and water and set aside.
- Mix all of the dry cake ingredients, including the sugar, in a large bowl. Stir well.
- Add the flax mixture to a medium bowl, then add the milk and squeeze the lemon into the bowl. Stir well.
- Then add the remaining wet ingredients: oil, apple sauce and vanilla. Stir well.
- Add all of the wet ingredients to the dry and stir together.
- Pour mixture into your desired cake pan and bake according these times: ( 9-inch round or cupcakes: 30 minutes ) ( 9x5 loaf pan: 50- 60 minutes )
- While cake is baking, chop berries and set aside.
- Make chocolate sauce by mixing ingredients together in a small bowl.
- When cake is done, allow to cool before adding chocolate sauce, about 15- 20 minutes.
- Add berries and drizzle chocolate sauce on top.
Notes
*This is a thin cake, not super dense, perfect for an afternoon treat or something on a warm summer night.
**We put chocolate sauce in a plastic bag and cut off the end to drizzle it on the cake, worked well.
