Tropical Plantain Salad

Ingredients
- 4 zucchini
- 1 cob of organic corn
- 1 tomato
- ½ pineapple
- 1 cup cilantro
- 3 plantains
- 2 limes
- 2 avocados
- salsa
- 1 tsp. garlic powder
- sea salt
- coconut oil
Instructions
- Use your spiralizer and spiralize your zucchini - if you have one. If not, dice into small cubes. Add zucchini to a large bowl. Next juice limes into bowl over the zucchini. Massage lime juice into the zucchini. Then cut corn off cob and add that to the bowl. Chop tomato, pineapple and cilantro. Add that to the bowl. Next turn oven to broil.
- Lightly oil a large baking sheet with coconut oil. Peel plantains and cut lengthwise in long strips. Lay flat and place in oven on broil for 3-6 minutes. Flip plantains, broil on the other side for 3-6 minutes.
- Next, scoop out avocado flesh. Place on cutting board and mash with the back of a fork. Add salt and garlic powder. Mix well.
- Chop cooled plantains into small chunks. Add plantains to salad. Mix well.
- Serve salad and top with salsa and homemade guacamole.
