Tomato Garlic Spread

Ingredients
- 3 cloves of garlic
- 2 heirloom tomatoes (any tomato will work)
- ½ cup sun dried tomatoes*
- ⅓ cup pumpkin seeds
- 2 Tbsp. olive oil
- 1 Tbsp. dried oregano
- 2 Tbsp. water
- salt and pepper
Instructions
- Add all ingredients to the food processor leaving out the oil, water, salt and pepper. Process until well combined.
- Scrape down sides.
- While running, add water and oil. Stop and add salt and pepper. Run one more time.
- Scrape out and serve.

*Soaked ahead of time
This is great for sandwiches, inside crepes, dipping chips or even vegetables.
To turn this into a marinara sauce, add vegetable broth to the food processor until it reaches desired consistency.
