Tomato Garlic Spread

Ingredients
  • 3 cloves of garlic
  • 2 heirloom tomatoes (any tomato will work)
  • ½ cup sun dried tomatoes*
  • ⅓ cup pumpkin seeds
  • 2 Tbsp. olive oil
  • 1 Tbsp. dried oregano
  • 2 Tbsp. water
  • salt and pepper
Instructions
  1. Add all ingredients to the food processor leaving out the oil, water, salt and pepper. Process until well combined.
  2. Scrape down sides.
  3. While running, add water and oil. Stop and add salt and pepper. Run one more time.
  4. Scrape out and serve.
Notes
*Soaked ahead of time

This is great for sandwiches, inside crepes, dipping chips or even vegetables.

To turn this into a marinara sauce, add vegetable broth to the food processor until it reaches desired consistency.
