Ingredients
Tofu:
  • 1 package sprouted tofu (10oz)
  • ¼ cup tamari
  • 1 Tbsp. garlic powder
  • 1 Tbsp. chili paste
  • 2-4 Tbsp. water
Wraps:
  • 1 head romaine
  • 1 cup brown rice, cooked
  • ¼ cup sesame seeds
Salad:
  • 1 head purple cabbage
  • 1 cucumber
  • 2 large carrots
  • 1 bell pepper
  • 4 green onions
  • 1 cup cilantro
  • ¼ cup peanut butter
  • 1 orange, juiced
  • 2 Tbsp. tamari
  • 1 Tbsp. maple syrup
  • 1 tsp. ginger powder (or fresh grated)
Peanut Sauce:
  • ¼ cup peanut butter
  • 1 orange, juiced
  • 1 Tbsp. maple syrup
  • ½ tsp. sesame oil
Instructions
  1. Mix all tofu ingredients (leaving out the tofu) in a large flat dish (we use a Pyrex, glass baking dish). Stir well.
  2. Next, drain tofu and press with a press or paper towels. Slice tofu in half-length wise and then cube in ½ inch cubes. Place tofu in mixture and stir well. Set aside and allow to soak.
  3. Next cook brown rice in a 1 to 2 ratio ( 1 cup rice to 2 cups water). Should take 30-40 minutes.
  4. While rice is cooking, shred cabbage and carrots and place in a large bowl. Chop cucumber, bell pepper, green onions and cilantro and place in the large bowl.
  5. In a small bowl mix orange juice, peanut butter, tamari, maple syrup and ginger. Stir well.
  6. Pour liquid into salad and stir well to combine (don't be afraid to use your hands). In that same small bowl mix all ingredients for peanut sauce, stir well.
  7. To assemble, take a piece of romaine and top it with a spoon of brown rice, salad mixture, tofu, a scope of peanut sauce and top with seeds.
  8. Eat like a taco!
