Tofu Lettuce Wraps

Ingredients
Tofu:
- 1 package sprouted tofu (10oz)
- ¼ cup tamari
- 1 Tbsp. garlic powder
- 1 Tbsp. chili paste
- 2-4 Tbsp. water
Wraps:
- 1 head romaine
- 1 cup brown rice, cooked
- ¼ cup sesame seeds
Salad:
- 1 head purple cabbage
- 1 cucumber
- 2 large carrots
- 1 bell pepper
- 4 green onions
- 1 cup cilantro
- ¼ cup peanut butter
- 1 orange, juiced
- 2 Tbsp. tamari
- 1 Tbsp. maple syrup
- 1 tsp. ginger powder (or fresh grated)
Peanut Sauce:
- ¼ cup peanut butter
- 1 orange, juiced
- 1 Tbsp. maple syrup
- ½ tsp. sesame oil
Instructions
- Mix all tofu ingredients (leaving out the tofu) in a large flat dish (we use a Pyrex, glass baking dish). Stir well.
- Next, drain tofu and press with a press or paper towels. Slice tofu in half-length wise and then cube in ½ inch cubes. Place tofu in mixture and stir well. Set aside and allow to soak.
- Next cook brown rice in a 1 to 2 ratio ( 1 cup rice to 2 cups water). Should take 30-40 minutes.
- While rice is cooking, shred cabbage and carrots and place in a large bowl. Chop cucumber, bell pepper, green onions and cilantro and place in the large bowl.
- In a small bowl mix orange juice, peanut butter, tamari, maple syrup and ginger. Stir well.
- Pour liquid into salad and stir well to combine (don't be afraid to use your hands). In that same small bowl mix all ingredients for peanut sauce, stir well.
- To assemble, take a piece of romaine and top it with a spoon of brown rice, salad mixture, tofu, a scope of peanut sauce and top with seeds.
- Eat like a taco!
