Thai Fried Quinoa

Ingredients
Fried Quinoa:
- 3 cups cooked quinoa
- 1 red bell pepper
- 1 zucchini*
- 1 onion
- 3 cloves of garlic
- 1 handful of spinach
- ¼ cup tamari
- ½ tsp. ginger powder
- 1 Tbsp. coconut sugar*
Garnish:
- ¼ sprouts*
- 1 orange or pineapple*
- ¼ cup sesame seeds
Instructions
- Chop garlic, onion, bell pepper and zucchini. Place in a medium sauce pan over medium heat. Stir frequently to prevent sticking, and add a little water as needed (could also add a little oil, if desired).
- Once onions become translucent and pepper is softer (you want a little crunch), add quinoa, ginger powder and coconut sugar (if using). Stir well.
- Next add in the spinach and tamari last. Stir well and cook until spinach starts to wilt.
- Taste and adjust seasoning to fit your liking.
- Top with chopped orange, sprouts and sesame seeds!
