Thai Fried Quinoa

Serves: 4-6
Fried Quinoa:
  • 3 cups cooked quinoa
  • 1 red bell pepper
  • 1 zucchini*
  • 1 onion
  • 3 cloves of garlic
  • 1 handful of spinach
  • ¼ cup tamari
  • ½ tsp. ginger powder
  • 1 Tbsp. coconut sugar*
  • ¼ sprouts*
  • 1 orange or pineapple*
  • ¼ cup sesame seeds
  1. Chop garlic, onion, bell pepper and zucchini. Place in a medium sauce pan over medium heat. Stir frequently to prevent sticking, and add a little water as needed (could also add a little oil, if desired).
  2. Once onions become translucent and pepper is softer (you want a little crunch), add quinoa, ginger powder and coconut sugar (if using). Stir well.
  3. Next add in the spinach and tamari last. Stir well and cook until spinach starts to wilt.
  4. Taste and adjust seasoning to fit your liking.
  5. Top with chopped orange, sprouts and sesame seeds!

Stores and reheats well
