Tempeh Tacos

Ingredients
Marinade:
- 2 Tbsp. ancho chili powder
- 2 Tbsp. tamari
- 1 lime, juiced
- 2 tsp. coriander
- 2 tsp. cumin
- 1 Tbsp. maple syrup
Tacos:
- 1 package tempeh
- 1 package corn tortillas
- 1 cup lettuce
- 2 tomatoes
- 2 leaks
- 1 bunch cilantro
Garnish:
- guacamole or avocado
- salsa
- hot sauce*
- nutritional yeast*
Instructions
- In a large bowl mix together marinade ingredients. Next, using a cheese grater, grate tempeh in with the marinade. Should look like taco meat. Stir well and marinade for at least 15 minutes.
- While tempeh is marinating, chop vegetables for tacos.
- Next heat frying pan to medium high and warm tortillas one at a time in pan, no oil needed. Heat for a quick minute on each side and then place in foil until ready to eat.
- Once tortillas are done, add tempeh and marinade into frying pan. Heat until hot and liquid is absorbed.
- To assemble, place a scoop of the tempeh in each corn tortilla, top with lettuce, tomatoes, leaks and cilantro.
- Garnish with salsa and guacamole and optional hot sauce and nutritional yeast.
