Ingredients
Salad:
  • 1 head of lettuce
  • 1 tomato
  • ½ a red onion
  • 1 green bell pepper
  • 1 zucchini
  • ½ pineapple
  • 2 avocados
  • 1 tsp. granulated garlic
  • 1 dash of salt
  • 1 small bag corn tortillas
Dressing:
  • 1 Tbsp. coconut sugar
  • ½ tsp. dijon mustard
  • 1 orange, juiced
  • 1 lime, juiced
  • 3 Tbsp. olive oil
Toppings:
  • nutritional yeast*
  • hot sauce*
Instructions
  1. Chop lettuce, tomato, green pepper & pineapple and place those in a large bowl.
  2. Next chop zucchini and onion, place in frying pan with a little water or vegetable broth or coconut oil and lightly sauté. Do this for 3-5 minutes and then add these to the salad.
  3. Next mash avocado and mix with garlic and sea salt, set aside.
  4. Make dressing by mixing all ingredients in a small bowl. Pour salad dressing over salad, mix well.
  5. Top with mashed avocado and serve with chips.
