Taco Salad

Ingredients
Salad:
- 1 head of lettuce
- 1 tomato
- ½ a red onion
- 1 green bell pepper
- 1 zucchini
- ½ pineapple
- 2 avocados
- 1 tsp. granulated garlic
- 1 dash of salt
- 1 small bag corn tortillas
Dressing:
- 1 Tbsp. coconut sugar
- ½ tsp. dijon mustard
- 1 orange, juiced
- 1 lime, juiced
- 3 Tbsp. olive oil
Toppings:
- nutritional yeast*
- hot sauce*
Instructions
- Chop lettuce, tomato, green pepper & pineapple and place those in a large bowl.
- Next chop zucchini and onion, place in frying pan with a little water or vegetable broth or coconut oil and lightly sauté. Do this for 3-5 minutes and then add these to the salad.
- Next mash avocado and mix with garlic and sea salt, set aside.
- Make dressing by mixing all ingredients in a small bowl. Pour salad dressing over salad, mix well.
- Top with mashed avocado and serve with chips.
