Sweet Tomato Cheez Pasta

Ingredients
Pasta:
- 1 box gluten-free pasta
- ½ red bell pepper
- ¼ cup onion
Sauce:
- 1 cup sundried tomatoes
- 2 roma tomatoes
- 1 Tbsp. molasses
- 3 Tbsp. maple syrup
- 2 Tbsp. apple cider vinegar
- ½ an onion
- 1 tsp. paprika
- ½ tsp. cayenne
- ¼ cup nutritional yeast
- ½ cup water
- 1 Tbsp. tamari
- black pepper to taste
Instructions
- Soak sundried tomatoes in water for at least 1 hour.
- Next make sauce by placing all ingredients into a high speed blender, you may have to stop and stir sauce throughout. You want it a little thick and smooth.
- Next, cook pasta according to package directions. While pasta cooks chop red pepper and onion.
- When pasta is cooked place sauce, cooked pasta and vegetables in a large sauce pan. Heat on medium heat until hot.
- Serve immediately and top with pepper if desired.
