Sweet Tomato Cheez Pasta

Serves: 2-4
  • 1 box gluten-free pasta
  • ½ red bell pepper
  • ¼ cup onion
  • 1 cup sundried tomatoes
  • 2 roma tomatoes
  • 1 Tbsp. molasses
  • 3 Tbsp. maple syrup
  • 2 Tbsp. apple cider vinegar
  • ½ an onion
  • 1 tsp. paprika
  • ½ tsp. cayenne
  • ¼ cup nutritional yeast
  • ½ cup water
  • 1 Tbsp. tamari
  • black pepper to taste
  1. Soak sundried tomatoes in water for at least 1 hour.
  2. Next make sauce by placing all ingredients into a high speed blender, you may have to stop and stir sauce throughout. You want it a little thick and smooth.
  3. Next, cook pasta according to package directions. While pasta cooks chop red pepper and onion.
  4. When pasta is cooked place sauce, cooked pasta and vegetables in a large sauce pan. Heat on medium heat until hot.
  5. Serve immediately and top with pepper if desired.
