Sweet Tahini Salad

Ingredients
Salad:
- 1 head organic lettuce, chopped
- 1 pomegranate, seeds only
- 1 organic bell pepper, chopped
- ¼ cup organic red onion, chopped
- 1 organic tomato, chopped
- ¼ cup organic mint leaves, chopped
Dressing:
- ¼ cup tahini
- 1 tablespoon organic chickpea miso
- 1 tablespoon lemon juice
- 1 tsp. sugar
- ¼ cup or more warm water
- salt and pepper to taste
Instructions
- Place all salad ingredients in a large bowl and stir well.
- Mix together dressing ingredients together in a small glass bowl.
- Serve salad with a little dressing.
- Store leftovers in the refrigerator but keep salad and dressing apart until ready to serve.
