Sweet Potato Spaghetti

Ingredients
Spaghetti:
- 1 package quinoa spaghetti
- 1 carrot
- ½ a red onion
- 1 large sweet potato
- 1 (8oz) can of tomato paste
- ¼ - ½ cup water
- ¼ cup nutritional yeast
- 1 tsp. garlic powder
- 2 tsp. oregano
- 2 Tbsp. olive oil
Toppings:
- salt & pepper
- red pepper flakes
- nutritional yeast
Instructions
- Preheat oven to 375°F.
- Wash and chop sweet potato into cubes. Place on a baking sheet lined with parchment paper or lightly oiled and bake for 30-35 minutes.
- While sweet potato bakes, cook noodles according to package directions.
- Next mix tomato paste, water, nutritional yeast, garlic, oregano and olive oil in a medium bowl. Sauce should be thick.
- Next chop onion and grate carrot, place in a large soup pot. Turn heat to medium and stir. Next add sauce mixture and cooked noodles. Stir well and turn to low. Add cooked sweet potatoes and stir again.
- Serve hot and top with salt, pepper, red pepper flakes and nutritional yeast.
