Ingredients
- 4 cups dried beans (we used pinto, navy and black eyed peas)
- 6 cups of water
- ½ cup molasses
- 1 cup tomato or bbq sauce
- ⅓ cup coconut sugar
- 1 tsp. liquid smoke
- 1 Tbsp. smoked paprika
- 1 Tbsp. granulated garlic
- 1 onion
- 1 Tbsp. dijon mustard
- sea salt to taste
- 2 Tbsp. vegan worcestershire sauce
Instructions
- Soak beans overnight (18-24 hrs in advance)
- Chop onion and set aside.
- In a large pot add beans and water; turn heat to medium and bring to a slow boil, once boiling place beans in crock pot with enough water to cover (about 3 inches). Add all remaining ingredients (including chopped onion) to crock pot or stove top pot and simmer for 6-7 hours.
- If cooking on stove you may need to add more water and stir on occasion.
- Adjust seasoning before serving and serve warm.
