Summer Sushi

Summer Sushi w/ Blueberry Ginger Soy Sauce

Ingredients
Sushi:
  • 1 package of nori rolls
  • 2 cups of rice, cooked
  • ½ a cucumber
  • 1 avocado
  • 2 kiwi
  • ¼ cup fresh basil
  • ¼ cup fresh mint
Ginger Sauce:
  • 1 cup fresh blueberries
  • 1 Tbsp. rice vinegar
  • 3 Tbsp. tamari (low sodium)
  • 1 sprinkle ground ginger
  • 1 sprinkle of coconut sugar
Instructions
  1. Make sauce by placing all ingredients in a food processor and process until smooth. Pour into a small dipping bowl and set aside.
  2. Next, thinly slice all vegetables, fruit and herbs.
  3. Lay a nori sheet, smooth side up, and spread a thin layer of rice across the entire sheet (leave room at the top and bottom for folding).
  4. Next place cucumber, avocado, kiwi, mint and basil pieces in the middle.
  5. Roll sushi one side to the other very tightly.
  6. Slice roll into bite-sized pieces (usually grooved lines on nori sheets to help you).
  7. Continue until all filling is used up.
  8. Serve and dip into sauce.
Notes
*Do not over stuff.
*Use a sushi mat, they are inexpensive and make all the difference.
