Summer Sushi w/ Blueberry Ginger Soy Sauce

Ingredients
Sushi:
- 1 package of nori rolls
- 2 cups of rice, cooked
- ½ a cucumber
- 1 avocado
- 2 kiwi
- ¼ cup fresh basil
- ¼ cup fresh mint
Ginger Sauce:
- 1 cup fresh blueberries
- 1 Tbsp. rice vinegar
- 3 Tbsp. tamari (low sodium)
- 1 sprinkle ground ginger
- 1 sprinkle of coconut sugar
Instructions
- Make sauce by placing all ingredients in a food processor and process until smooth. Pour into a small dipping bowl and set aside.
- Next, thinly slice all vegetables, fruit and herbs.
- Lay a nori sheet, smooth side up, and spread a thin layer of rice across the entire sheet (leave room at the top and bottom for folding).
- Next place cucumber, avocado, kiwi, mint and basil pieces in the middle.
- Roll sushi one side to the other very tightly.
- Slice roll into bite-sized pieces (usually grooved lines on nori sheets to help you).
- Continue until all filling is used up.
- Serve and dip into sauce.

*Do not over stuff.
