Spinach Penne Pasta

Serves: 2-4
  • 1 package quinoa penne
  • 2 cups spinach
  • 2 cups basil
  • 3 Tbsp. tahini
  • 1 Tbsp. miso paste
  • ¼ cup nutritional yeast
  • 2-4 Tbsp. water
  • 2 Tbsp. garlic powder
  • salt and pepper to taste
  • 4 Tbsp. pumpkin seeds
  • sriracha sauce
  1. Cook pasta according to package directions.
  2. While pasta cooks, add all other ingredients leaving out pumpkin seeds and sriracha into food processor. Add water to reach desired consistency.
  3. Drain pasta and mix in sauce.
  4. Before serving, top with pumpkin seeds and sriracha.
*If serving hot, top with pumpkin seeds and sriracha.

**If serving cold place in refrigerator.
