Sour Cream & Onion Kale Chips

  • 1½ cups macadamia nuts
  • 4 Tbsp. lemon Juice
  • 1½ Tbsp. apple cider vinegar
  • ¼ tsp. sea salt
  • 1 head green kale
  • ¼ - ½ cup filtered water
  • 1 small red onion*
  1. Pre-heat oven to 300°F.
  2. Starting at the bottom of the kale, strip away all leafs, leaving behind only the stems. Tear leafs into approximately 2-3 inch pieces.
  3. In a food processor, combine and mix the nuts, lemon juice, vinegar, salt and ¼ cup water until creamy and smooth. Sauce should be the consistency of a salad dressing. Add more water if necessary.
  4. Using mandolin, thinly shave red onion.
  5. Toss the sauce with the kale and red onion until thoroughly combined and spread on baking sheet lined with parchment paper.
  6. Bake at 300 for 30 minutes (May be shorter or longer depending on oven)
*Thinly sliced with mandolin
