Sour Cream & Onion Kale Chips

Ingredients
- 1½ cups macadamia nuts
- 4 Tbsp. lemon Juice
- 1½ Tbsp. apple cider vinegar
- ¼ tsp. sea salt
- 1 head green kale
- ¼ - ½ cup filtered water
- 1 small red onion*
Instructions
- Pre-heat oven to 300°F.
- Starting at the bottom of the kale, strip away all leafs, leaving behind only the stems. Tear leafs into approximately 2-3 inch pieces.
- In a food processor, combine and mix the nuts, lemon juice, vinegar, salt and ¼ cup water until creamy and smooth. Sauce should be the consistency of a salad dressing. Add more water if necessary.
- Using mandolin, thinly shave red onion.
- Toss the sauce with the kale and red onion until thoroughly combined and spread on baking sheet lined with parchment paper.
- Bake at 300 for 30 minutes (May be shorter or longer depending on oven)
