Because Sarah and I aim to eat 1 salad every day, we have to keep our salad dressings fresh, otherwise we may become bored and quit eating them.
So, inevitably, we end up creating new recipes on the fly.
I was doing dishes on night a couple weeks ago and Sarah asked me to quickly whip up a dressing, something with tahini and mustard for the salad she was just wrapping up.
(little did she know how deeply in love she would fall in with this dressing)
I pulled out a 2 cup glass Pyrex measuring cup, the jar of tahini, bottle of mustard, and started feeling my way through it.
The result was a dressing that is creamy, savory and downright sinful if you eat a vegan diet (it seriously tastes like there’s dairy in it)!
This dressing is great on a simple salad, or even mixed into a bowl of sauteed veggies and added to your favorite wraps.
It’s simple, versatile, and has a flavor that will ask you to repeat the following week.
Also – the ‘So Good’ name inspiration came from what Sarah repeatedly says whenever we have it:)
Here it is…
So Good Caesar Dressing
- ⅓ cup tahini
- 1½ Tbsp. dijon mustard
- 3-4 shakes sea salt
- 1 tsp granulated garlic
- ½ tsp dried basil
- ¼ tsp dried oregano
- 2 tsp apple cider vinegar
- 1 Tbsp. olive oil (you can also use avocado oil)
- water, as needed
- Mix all ingredients together in a glass measuring cup or small bowl
- Adjust water to reach your preferred consistency (we like ours saucy)
- Enjoy!
