Ingredients
Potato Hash:
- 2 sweet potatoes
- 1 bell pepper
- ½ onion
- 5 mushrooms
- 1 zucchini
- 2 Tbsp. water
- ¼ cup tamari
- 1 Tbsp. smoked paprika
- 1 Tbsp. garlic powder
- pepper to taste
Garnish:
- 2 tomatoes
- nutritional yeast
- hot sauce*
- salsa*
Instructions
- Preheat oven to 350°F.
- Chop sweet potatoes into ½ inch cubes and place on a lined or oiled baking sheet. Bake for 25 minutes.
- While the sweet potatoes bake, chop your bell pepper, onion, mushrooms and zucchini. Keep them uniform in size for even cooking.
- Next, chop your tomatoes and set aside. Place a frying pan on medium heat and pour in water. Add bell peppers and onions. Once water has evaporated add mushrooms and tamari. Stir equally to ensure do they do not burn.
- Next add baked sweet potato to pan and stir well. Add paprika, garlic and pepper. Stir to combine.
- Remove from heat and garnish with tomatoes, nutritional yeast, salsa and/or hot sauce.
