Simple Potato Peanut Soup

This soup is fast & filling - we love having this on a weekend with a great movie! Benefit: Vitamin A. Unlike white potatoes, sweet potatoes are full of beta-carotene, which your body converts to Vitamin A, which is super necessary for healthy eyes and a strong immune system.

Serves: 4-6
Ingredients
- 1 28oz can diced tomatoes
- 1 can chickpeas, rinsed
- 1 sweet potato, cubed
- 1 can light coconut milk
- 2 cups vegetable broth
- 2 Tbsp. peanut butter
- ¼ cup yellow onion, diced
- 1 clove of garlic, minced
- 2 tsp. cumin
- 2 tsp. ginger powder
- 1 container hummus (premade)
- 1 cup cilantro, chopped
Instructions
- Place all ingredients (except hummus & cilantro) in a large soup pot and bring to a boil.
- Stir well, cover and turn down to medium and cook for 30 minutes.
- After 30 minutes check a sweet potato with a fork and see if it’s soft, if so soup is ready - otherwise keep cooking.
- Serve soup and top with hummus and cilantro.
- Don’t skip the hummus, it really brings it all together!
