This soup is fast & filling - we love having this on a weekend with a great movie! Benefit: Vitamin A. Unlike white potatoes, sweet potatoes are full of beta-carotene, which your body converts to Vitamin A, which is super necessary for healthy eyes and a strong immune system.

Ingredients
  • 1 28oz can diced tomatoes
  • 1 can chickpeas, rinsed
  • 1 sweet potato, cubed
  • 1 can light coconut milk
  • 2 cups vegetable broth
  • 2 Tbsp. peanut butter
  • ¼ cup yellow onion, diced
  • 1 clove of garlic, minced
  • 2 tsp. cumin
  • 2 tsp. ginger powder
  • 1 container hummus (premade)
  • 1 cup cilantro, chopped
Instructions
  1. Place all ingredients (except hummus & cilantro) in a large soup pot and bring to a boil.
  2. Stir well, cover and turn down to medium and cook for 30 minutes.
  3. After 30 minutes check a sweet potato with a fork and see if it’s soft, if so soup is ready - otherwise keep cooking.
  4. Serve soup and top with hummus and cilantro.
  5. Don’t skip the hummus, it really brings it all together!
