Nori Rolls:
  • 1 cup cooked brown rice
  • 4 Nori sheets
  • ½ a cucumber
  • 4 small carrots
  • 1 avocado
  • ½ cup mint leaves
  • ¼ cup sesame seeds
Wasabi & Miso Sauce:
  • wasabi powder
  • 2 Tbsp. tamari
  • 1 Tbsp. miso paste
  • 1 Tbsp. coconut nectar
  • 3 Tbsp. rice vinegar
  • dash ginger powder
Instructions
  1. Slice (length-wise) cucumbers, carrots and avocados so they are all the same size and length. Set them aside.
  2. Next de-stem the mint and only use the leaves.
  3. Place sesame seeds in a small bowl.
  4. Next make the wasabi sauce, by following the directions on the package, instead of using water try using tamari.
  5. Make another sauce, the miso sauce by mixing miso, coconut nectar, 2Tbsp. tamari, rice vinegar and a dash of ginger. Stir well breaking up the paste.
  6. Next lay the Nori wrap down, rough side up. Thinly layer rice across the entire sheet. Then in the middle add vegetables, not too many. Roll up using a sushi mat if you have one. Cut into bite-size rolls.
  7. Eat by dipping roll into 1 sauce or both and then into the sesame seeds.
