Simple Nori Rolls

Ingredients
Nori Rolls:
- 1 cup cooked brown rice
- 4 Nori sheets
- ½ a cucumber
- 4 small carrots
- 1 avocado
- ½ cup mint leaves
- ¼ cup sesame seeds
Wasabi & Miso Sauce:
- wasabi powder
- 2 Tbsp. tamari
- 1 Tbsp. miso paste
- 1 Tbsp. coconut nectar
- 3 Tbsp. rice vinegar
- dash ginger powder
Instructions
- Slice (length-wise) cucumbers, carrots and avocados so they are all the same size and length. Set them aside.
- Next de-stem the mint and only use the leaves.
- Place sesame seeds in a small bowl.
- Next make the wasabi sauce, by following the directions on the package, instead of using water try using tamari.
- Make another sauce, the miso sauce by mixing miso, coconut nectar, 2Tbsp. tamari, rice vinegar and a dash of ginger. Stir well breaking up the paste.
- Next lay the Nori wrap down, rough side up. Thinly layer rice across the entire sheet. Then in the middle add vegetables, not too many. Roll up using a sushi mat if you have one. Cut into bite-size rolls.
- Eat by dipping roll into 1 sauce or both and then into the sesame seeds.
