Salty Parsnips & Potatoes

Serves: 2-4
  • 2 large or 5 small parsnips
  • 1 sweet potato
  • 1 Tbsp. coconut oil
  • 1 tsp. sea salt
  1. Preheat oven to 400°F.
  2. Chop parsnips and potatoes and place them in a medium bowl. Add coconut oil and salt, mix well. Place flat on a baking sheet and bake for 30-35 minutes. Remove when soft.
  3. Eat as a side or place on a big green salad.
