Serves: 2-4
Ingredients
- 1 large or 2 small eggplants
- 4 yellow squash
- 3 carrots
- 2 Tbsp. olive oil
- a few dashes of salt and pepper
Instructions
- Preheat oven to broil.
- Wash and chop eggplants, yellow squash and carrots.
- Place vegetables in a large bowl. Add oil, salt and pepper. Stir well.
- Lay vegetables flat on a baking sheet. Broil for 10 minutes. Take out and stir, place back in oven for 5 more minutes.
- Serve alone or on top of a salad or bowl of rice.
