Serves: 2-4
  • 1 large or 2 small eggplants
  • 4 yellow squash
  • 3 carrots
  • 2 Tbsp. olive oil
  • a few dashes of salt and pepper
  1. Preheat oven to broil.
  2. Wash and chop eggplants, yellow squash and carrots.
  3. Place vegetables in a large bowl. Add oil, salt and pepper. Stir well.
  4. Lay vegetables flat on a baking sheet. Broil for 10 minutes. Take out and stir, place back in oven for 5 more minutes.
  5. Serve alone or on top of a salad or bowl of rice.
