Roasted Radish Medley

Serves: 2-4
  • 2 soft yellow squash
  • 1 bunch pink/red radishes
  • ½ an onion
  • 1 Tbsp. olive oil
  • 1 Tbsp. dried oregano
  • salt and pepper
  1. Wash and chop squash, radishes and onions. Place in a large bowl. Add remaining ingredients to large bowl and stir.
  2. Preheat oven to broil.
  3. Place medley on baking sheet and broil for 10 minutes. Remove and serve.
*Great alone or over rice or salad
