Roasted Radish Medley

Serves: 2-4
Ingredients
- 2 soft yellow squash
- 1 bunch pink/red radishes
- ½ an onion
- 1 Tbsp. olive oil
- 1 Tbsp. dried oregano
- salt and pepper
Instructions
- Wash and chop squash, radishes and onions. Place in a large bowl. Add remaining ingredients to large bowl and stir.
- Preheat oven to broil.
- Place medley on baking sheet and broil for 10 minutes. Remove and serve.
