Raw Peach Cobbler

Ingredients
Crust:
- 2 cups of walnuts
- ¾ cup of dates
- ¼ cup of raisins (pitted & broken into pieces)
Filling:
- 6 peaches
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ¼ tsp. ginger
- ½ cup of dates
Instructions
- Place the crust ingredients into a food processor, and process until coarsely chopped.
- Reserve ¾ of a cup of the mixture for topping and place the remaining in the bottom of a 8x8 glass baking dish. Press down firmly with fingers.
- For the filling, chop 3 of the peaches and place those along with the cinnamon, nutmeg, ginger and dates into a food processor. Process until smooth. Pour mixture on top of crust.
- Dice remaining 3 peaches and sprinkle those over the top of the mixture.
- Finally, add the remaining crust over the peaches. Press down firmly with hands.
- Serve immediately.
