Ingredients
Crust:
  • 2 cups of walnuts
  • ¾ cup of dates
  • ¼ cup of raisins (pitted & broken into pieces)
Filling:
  • 6 peaches
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. ginger
  • ½ cup of dates
Instructions
  1. Place the crust ingredients into a food processor, and process until coarsely chopped.
  2. Reserve ¾ of a cup of the mixture for topping and place the remaining in the bottom of a 8x8 glass baking dish. Press down firmly with fingers.
  3. For the filling, chop 3 of the peaches and place those along with the cinnamon, nutmeg, ginger and dates into a food processor. Process until smooth. Pour mixture on top of crust.
  4. Dice remaining 3 peaches and sprinkle those over the top of the mixture.
  5. Finally, add the remaining crust over the peaches. Press down firmly with hands.
  6. Serve immediately.
