Serves: 4-6
Vegetable Medley:
  • 2 tomatoes
  • 1 cucumber
  • 1 cup cilantro
  • 1 bell pepper
  • ¼- 1/2 jalapeno
  • 2 limes
  • ½ an onion
Burrito Filling:
  • 1 cup walnuts
  • 1 Tbsp. coconut oil
  • 1 Tbsp. cumin
  • 2 tsp. coriander
  • 1 tsp. Brags Liquid Aminos
Peach Guacamole:
  • 1 peach
  • 2 avocados
  • 1 tsp. garlic powder
  • 1 dash of salt
Burrito Shells:
  • 1 large head of romaine lettuce
  • hot sauce (optional)
  1. Wash all vegetables.
  2. Next chop all vegetables for the medley, leaving out the lime. Juice the lime into the bowl with all of the vegetables. Stir and allow flavors to marinade.
  3. Next prepare the peach guacamole. Dice the peach and place in a medium bowl. Pit the avocado and mash the flesh on a cutting board with the back of fork. Add garlic and salt and mix. Add avocado to the bowl with peach and stir well. Set aside.
  4. Next make the burrito filling. Place walnuts into the food processor, process until crushed into small pieces. Then add remaining ingredients and pulse once or twice to mix. Remove from food processor and place into a bowl.
  5. To assemble, take a romaine leaf and fill with vegetable medley, then burrito filling, top with guacamole and hot sauce if using, repeat until all leaves are gone.
