We are BIG fans of pumpkin and during the fall we love weekend brunch at home! Serve these waffles with a big green smoothie and your weekend will be off to a great start! Benefit: Happiness. Ok, but seriously… make these waffles and tell me they don’t bring some happiness to your day!
Serves: 2
  • 2 cups brown rice flour
  • 1½ tsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • ¾ cup pumpkin puree
  • 1 cup almond milk
  • ½ cup water
  • 1 Tbsp. flax meal
  • 1 Tbsp. coconut oil
  • 2 Tbsp. maple syrup
  • ¼ cup chocolate chips, maple syrup, almond butter, fresh berries
  1. Preheat waffle iron and lightly oil with coconut oil.
  2. Mix dry ingredients in one bowl and wet in another. Add wet ingredients to dry and stir well.
  3. Cook waffles according to waffle iron directions. (We have a big waffle iron and this made 2 large waffles. Depending on your waffle iron this will make 2-3 waffles)
  4. Serve with desired toppings. We suggest CHOCOLATE!
