Pumpkin Spice Waffles

We are BIG fans of pumpkin and during the fall we love weekend brunch at home! Serve these waffles with a big green smoothie and your weekend will be off to a great start! Benefit: Happiness. Ok, but seriously… make these waffles and tell me they don’t bring some happiness to your day!

Ingredients
Waffles:
- 2 cups brown rice flour
- 1½ tsp. baking powder
- 2 tsp. pumpkin pie spice
- 1 tsp. cinnamon
- ¾ cup pumpkin puree
- 1 cup almond milk
- ½ cup water
- 1 Tbsp. flax meal
- 1 Tbsp. coconut oil
- 2 Tbsp. maple syrup
Toppings:
- ¼ cup chocolate chips, maple syrup, almond butter, fresh berries
Instructions
- Preheat waffle iron and lightly oil with coconut oil.
- Mix dry ingredients in one bowl and wet in another. Add wet ingredients to dry and stir well.
- Cook waffles according to waffle iron directions. (We have a big waffle iron and this made 2 large waffles. Depending on your waffle iron this will make 2-3 waffles)
- Serve with desired toppings. We suggest CHOCOLATE!
