Ingredients
  • 1½ cups cooked quinoa
  • ¾ cup pumpkin puree
  • ½ cup dried cranberries
  • 1 zucchini
  • 1 Tbsp. flax meal
  • 3 Tbsp. water
  • 1 tsp. cinnamon
  • 1 tsp. ginger powder
  • 1 Tbsp. fresh sage
  • salt & pepper, to taste
Instructions
  1. Cook quinoa according to package directions or use leftover quinoa. Allow quinoa to cool so you can work with it.
  2. Mix together flax and water in a small glass.
  3. Preheat oven to 375°F. Line a large baking sheet with parchment paper.
  4. Next grate zucchini, add that along with pumpkin, cranberries, cinnamon, ginger and cooked quinoa to a large bowl. Mix well.
  5. Next add flax mixture to large bowl. Using your hands, form into patties. Should make 8-10 cakes depending on the size.
  6. Cook in oven for 15 minutes and then take out flip and cook for 15 more on the other side.
Notes
They freeze great!
