Pumpkin Quinoa Patties

Ingredients
- 1½ cups cooked quinoa
- ¾ cup pumpkin puree
- ½ cup dried cranberries
- 1 zucchini
- 1 Tbsp. flax meal
- 3 Tbsp. water
- 1 tsp. cinnamon
- 1 tsp. ginger powder
- 1 Tbsp. fresh sage
- salt & pepper, to taste
Instructions
- Cook quinoa according to package directions or use leftover quinoa. Allow quinoa to cool so you can work with it.
- Mix together flax and water in a small glass.
- Preheat oven to 375°F. Line a large baking sheet with parchment paper.
- Next grate zucchini, add that along with pumpkin, cranberries, cinnamon, ginger and cooked quinoa to a large bowl. Mix well.
- Next add flax mixture to large bowl. Using your hands, form into patties. Should make 8-10 cakes depending on the size.
- Cook in oven for 15 minutes and then take out flip and cook for 15 more on the other side.
