Persimmon Pomegranate Salad

This is a fancy salad but comes together QUICK… and one that will have you saying “I could eat this salad every day!” Benefit: Antioxidants. Pomegranates are loaded with antioxidants, great for keeping your skin looking radiant during the cold dry months.

Serves: 2-4
Ingredients
Salad:
- 1 head of lettuce
- 1 persimmon
- 1 pomegranate
- ¼ cup red onion
- ½ cup alfalfa sprouts
- 1 avocado
- salt and pepper to taste
Dressing:
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- 1 Tbsp. dijon mustard
- 1 tsp. dried oregano
- 1 tsp. coconut sugar
Instructions
- Chop lettuce, persimmon, red onion and avocado. Add these to a large bowl along with the sprouts after rinsing.
- Next cut pomegranate in half and remove seeds. Add seeds to salad and discard the rest.
- Mix dressing ingredients in a small bowl or measuring glass. Pour dressing over salad.
- Salad is great with pecans or butternut squash to make more filling.
