This is a fancy salad but comes together QUICK… and one that will have you saying “I could eat this salad every day!” Benefit: Antioxidants. Pomegranates are loaded with antioxidants, great for keeping your skin looking radiant during the cold dry months.

Ingredients
Salad:
  • 1 head of lettuce
  • 1 persimmon
  • 1 pomegranate
  • ¼ cup red onion
  • ½ cup alfalfa sprouts
  • 1 avocado
  • salt and pepper to taste
Dressing:
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. olive oil
  • 1 Tbsp. dijon mustard
  • 1 tsp. dried oregano
  • 1 tsp. coconut sugar
Instructions
  1. Chop lettuce, persimmon, red onion and avocado. Add these to a large bowl along with the sprouts after rinsing.
  2. Next cut pomegranate in half and remove seeds. Add seeds to salad and discard the rest.
  3. Mix dressing ingredients in a small bowl or measuring glass. Pour dressing over salad.
  4. Salad is great with pecans or butternut squash to make more filling.
