Ingredients
  • 4 extra-ripe bananas
  • 1 tsp. vanilla extract
  • 1 Tbsp. flax meal
  • 3 Tbsp. water
  • ½ cup organic apple sauce
  • 2 Tbsp. coconut oil
  • ¼ cup coconut sugar
  • 2 tsp. baking soda
  • ¾ tsp. salt
  • 1 tsp. cinnamon
  • 1½ cups almond meal
  • 1 cup brown rice flour
  • ½ cup garbanzo bean flour
  • ¼ cup walnuts, chopped
Instructions
  1. Preheat oven to 350°F.
  2. Mix together flax and water, set aside for 5 minutes.
  3. Next mix together, flours, baking soda, cinnamon in a large bowl.
  4. Next mash 3 bananas with the back of a fork, add those to the bowl add remaining ingredients, reserving walnuts and remaining banana. Stir well. Next, fold in walnuts.
  5. Line loaf pan with parchment paper and pour in batter.
  6. Next chop or slice remaining banana and place on top of loaf. Place in oven and bake for 1 hour.
  7. Allow to cool 30 minutes before cutting.
  8. Store extra bread in refrigerator.
