Ingredients
- 4 extra-ripe bananas
- 1 tsp. vanilla extract
- 1 Tbsp. flax meal
- 3 Tbsp. water
- ½ cup organic apple sauce
- 2 Tbsp. coconut oil
- ¼ cup coconut sugar
- 2 tsp. baking soda
- ¾ tsp. salt
- 1 tsp. cinnamon
- 1½ cups almond meal
- 1 cup brown rice flour
- ½ cup garbanzo bean flour
- ¼ cup walnuts, chopped
Instructions
- Preheat oven to 350°F.
- Mix together flax and water, set aside for 5 minutes.
- Next mix together, flours, baking soda, cinnamon in a large bowl.
- Next mash 3 bananas with the back of a fork, add those to the bowl add remaining ingredients, reserving walnuts and remaining banana. Stir well. Next, fold in walnuts.
- Line loaf pan with parchment paper and pour in batter.
- Next chop or slice remaining banana and place on top of loaf. Place in oven and bake for 1 hour.
- Allow to cool 30 minutes before cutting.
- Store extra bread in refrigerator.
