Pecan Pie

Ingredients
Crust:
- 1 cup raw dates (soft)
- 1 cup almond flour
- ¼ cup pecans
- 2 Tbsp. coconut oil
- 1 dash sea salt
Filling:
- 1 cup dark chocolate chips
- ½ cup dates
- 2 Tbsp. maple syrup
- 2 Tbsp. coconut oil
- 1 cup pecans
- 2 Tbsp. coconut oil
- ¼ cup water
Topping:
- ¼ – ½ cup pecans
Instructions
- Preheat oven to 350°F and lightly oil a 9 inch pie pan/tin.
- In a food processor place all ingredients in for pie crust (remove the date pits). Blend until mixture resembles sand, and when you pinch mixture it should stick together. Empty into pie tin and pat down firmly with hands.
- Poke a few small holes in crust with fork. Bake for 10 minutes.
- Next in food processor mix all ingredients for filling EXCEPT THE CHOCOLATE CHIPS. Blend until smooth. Remove crust from oven. Set aside.
- In sauce pan/double broiler, melt the chocolate. Pour chocolate into the crust and spread until smooth.
- Next, top with filling from food processor.
- Place pie back into the oven for 15 minutes. Remove pie from oven and place pecans on top, decorate top however you like. And place back in the oven for 3- 5 minutes to toast pecans.
- Serve with ice cream!
