Ingredients
  • brown rice tortillas
  • ½ cup spinach
  • 1 pear
  • 1 avocado
  • ¼ cup sliced onion
  • ¼ cup cilantro
  • 1 tomato
  • ¼ cup organic peanuts
  • ¼ cup peanut butter
  • 1 tsp. chopped ginger
  • 2 Tbsp. maple syrup
  • 1 Tbsp. tamari
  • 1 tsp. sriracha
Instructions
  1. Chop and slice spinach, pear, avocado, red onion, cilantro and tomato.
  2. Place vegetables on a large platter and set aside.
  3. Next make peanut sauce by putting peanut butter, ginger, maple syrup, tamari and sriracha in a food processor and process until smooth. Pour into a small bowl.
  4. Make wrap by placing vegetables on brown rice tortilla. Spoon 2 spoonful's of peanut sauce and top with peanuts.

      Sarah! YUM! I didn’t make the wrap but I did just drown my steamed sweet potatoes and Chinese cabbage in this amazing sauce. So good!!!!
      (The sauce was a little paste-y for me so I added water as needed– about 1/4-1/3 cup I think.– to make it saucier. )
