Ingredients
Waffles:
  • 2 cups brown rice flour
  • 4 Tbsp. cacao powder (cocoa works)
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • ¼ cup organic peanut butter
  • 2¼ cups non-dairy milk
  • 1½ Tbsp. flax meal
  • 1 Tbsp. maple syrup
  • 1 Tbsp. coconut oil (melted or at least soft)
Cherry Spread:
  • 1½ cups pitted cherries
  • 3 Tbsp. maple syrup
  • 2 Tbsp. chia seeds
  • 1 Tbsp. vanilla
Instructions
  1. Heat waffle iron and lightly oil.
  2. In a small bowl, combine flax meal and non-dairy milk. Set aside.
  3. In a large bowl, mix together flour, cacao, cinnamon and baking powder. Stir well to combine.
  4. Next add flax mixture to large bowl along with coconut oil and maple syrup. Stir well. Next add peanut butter and stir to distribute evenly. Chunks of peanut butter are okay.
  5. Scoop out batter onto waffle iron. Depending on waffle iron, batter should make 3 large or 5 small waffles.
  6. While waffles cook, make cherry spread. In a medium sauce pan add cherries and heat on medium heat. Break up and smash cherries with back of fork as they heat. Add vanilla & maple syrup and heat until all the cherries are broken up and juices are released, which is about 3-5 minutes. Next add chia seeds and remove from heat. Give a good stir and allow 5 minutes to set up.
  7. Top waffles with cherry spread and any other desired toppings!
