Ingredients
Salad:
- 1 head lettuce
- 1 can garbanzo beans
- ¼ cup almonds
- 2 carrots
- 1 mango
- 1 pint blackberries
- 1 tomato
Dressing:
- 3 Tbsp. olive oil
- 1 tsp. dijon mustard
- 3 Tbsp. maple syrup
- 2 Tbsp. water
- 1 tsp. cinnamon
- ½ tsp. ginger
- 3 Tbsp. apple cider vinegar
Instructions
- Chop lettuce, mango and tomato and place in a large bowl. Shred carrots and add those to the bowl. Chop almonds and add to bowl along with blackberries. Drain & rinse garbanzo beans and in.
- Mix all dressing ingredients in a small bowl.
- When ready, pour dressing over salad, toss and serve.
