Oregano Mint Salad

Ingredients
Salad:
- 1 head of lettuce
- 4 small or 2 large carrots
- 1 (14 oz.) can of kidney beans
- 2 green onions
- ¼ cup cilantro
- 1 avocado
Dressing:
- 1 lemon, zested
- ¼ cup tahini
- 1 Tbsp. flax oil
- ¼ cup fresh mint
- 1 Tbsp. dried oregano
- 1 dash sea salt
- ½ – ⅔ cup water
- pepper
Instructions
- Wash and chop, lettuce, carrots, onions, and cilantro place in a large bowl.
- Next drain beans and add those along with sliced avocado to the bowl.
- To make dressing place all ingredients in a food processor, use only ½ cup of water to start as amount of water will depend on the brand of tahini you use. Process until smooth; add additional sea salt and a dash of pepper.
- When ready to serve pour dressing over salad and toss well.
