Ingredients
Salad:
  • 1 head of lettuce
  • 4 small or 2 large carrots
  • 1 (14 oz.) can of kidney beans
  • 2 green onions
  • ¼ cup cilantro
  • 1 avocado
Dressing:
  • 1 lemon, zested
  • ¼ cup tahini
  • 1 Tbsp. flax oil
  • ¼ cup fresh mint
  • 1 Tbsp. dried oregano
  • 1 dash sea salt
  • ½ – ⅔ cup water
  • pepper
Instructions
  1. Wash and chop, lettuce, carrots, onions, and cilantro place in a large bowl.
  2. Next drain beans and add those along with sliced avocado to the bowl.
  3. To make dressing place all ingredients in a food processor, use only ½ cup of water to start as amount of water will depend on the brand of tahini you use. Process until smooth; add additional sea salt and a dash of pepper.
  4. When ready to serve pour dressing over salad and toss well.
