Orange Chocolate Zucchini Cookies

Ingredients
- ½ cup coconut oil
- ¾ cup coconut sugar
- 1 small orange, zested
- 1 small zucchini, shredded
- 1 Tbsp. vanilla extract
- 2 Tbsp. ground flax seeds
- 6 Tbsp. water
- 1 tsp. apple cider vinegar
- 1 cup +2 Tbsp. brown rice flour
- ½ tsp. baking soda
- ½ tsp. baking powder
- 1 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F.
- Combine coconut oil and sugar in a large mixing bowl and mix until well combined.
- In a separate small bowl add flaxmeal, water, vanilla and vinegar. Stir well and allow mixture to gel.
- In another bowl combine the flour, baking soda and baking powder. Stir until well combined.
- Now pour flour mixture into bowl with coconut oil and sugar. Stir well.
- Next add zest of 1 orange and shredded zucchini to large bowl. Also add contents of bowl with the flax meal, water, vanilla and vinegar. Stir well. Add the chocolate chips and give it another stir.
- Using hands form into cookies and place onto a cookie sheet lined with parchment paper. Should make 1 dozen cookies; allow at least two inches between each. Bake for 12 – 16 minutes or until the cookies starts to set. Cookies will continue to cook once you take them out of the oven.
- Remove from the oven and allow them to cool for a few minutes, then move them to a wire rack to cool.
- Allow cookies to cool completely before handing as they are a bit crumbly.
