Ingredients
  • 1 cup rolled oats
  • 1 cup brown rice flour (or any gluten free grain flour)
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. ginger
  • ¼ tsp. baking soda
  • ¼ cup coconut oil, melted
  • ½ cup coconut sugar
  • 3 Tbsp. flax + 6 Tbsp. water (for a flax egg)
  • 1 tsp. vanilla
  • ⅓ cup applesauce
  • 2 Tbsp. coconut flakes
  • ½ cup raisins
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line baking sheet with parchment paper.
  3. In a large bowl mix oats, flour, salt, baking powder, cinnamon, nutmeg, ginger, baking soda, coconut sugar, coconut flakes and raisins, stir well.
  4. In another bowl mix coconut oil, water and flax mixture, vanilla and apple sauce, stir well.
  5. Add wet ingredients to dry and mix to combine.
  6. Form into 12-14 cookies and bake for 18-20 minutes, allow to cool for 5 minutes before handling.
Notes
We tested these with chocolate chips and the raisin was actually a lot better…might be good with chocolate chips and raisins…and maybe some cooked apples cubes. Let us know if you try any other variations.
