Oatmeal Raisin Cookies

Serves: 12 cookies
Ingredients
- 1 cup rolled oats
- 1 cup brown rice flour (or any gluten free grain flour)
- ½ tsp. salt
- ½ tsp. baking powder
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. ginger
- ¼ tsp. baking soda
- ¼ cup coconut oil, melted
- ½ cup coconut sugar
- 3 Tbsp. flax + 6 Tbsp. water (for a flax egg)
- 1 tsp. vanilla
- ⅓ cup applesauce
- 2 Tbsp. coconut flakes
- ½ cup raisins
Instructions
- Preheat oven to 350 degrees F.
- Line baking sheet with parchment paper.
- In a large bowl mix oats, flour, salt, baking powder, cinnamon, nutmeg, ginger, baking soda, coconut sugar, coconut flakes and raisins, stir well.
- In another bowl mix coconut oil, water and flax mixture, vanilla and apple sauce, stir well.
- Add wet ingredients to dry and mix to combine.
- Form into 12-14 cookies and bake for 18-20 minutes, allow to cool for 5 minutes before handling.
Notes
We tested these with chocolate chips and the raisin was actually a lot better…might be good with chocolate chips and raisins…and maybe some cooked apples cubes. Let us know if you try any other variations.
