Oatmeal Chocolate Bars

Ingredients
Bars:
- 2 cups of thick rolled oats
- ½ cup of raisins
- ½ cup cacao/cocoa powder
- ¼ cup sunflower seeds
- ¾ cup dark chocolate chips
- ¼ cup dried coconut flakes
- 1 Tbsp. vanilla extract
- 2 Tbsp. flax meal
- 2 Tbsp. water
- ¼ cup coconut oil
Topping:
- 1 cup dark chocolate chips
- 1 Tbsp. pumpkin spice
Instructions
- Preheat oven to 375°F.
- Line 9x9 Pyrex with parchment paper and set aside. Mix flax meal and water together in a small dish and set aside.
- In a food processor combine oats, raisins, coconut flakes, vanilla and coconut oil. Process until mixture starts to stick together. May need a little more oil (ours didn't).
- Pour mixture into a large bowl and add flax mixture, sunflower seeds and chocolate chips. Fold in while mixing with spoon.
- Scoop mixture into baking dish and flatten with hands. Bake for 25 min.
- Place baking dish in freezer for 1 hour to harden.
- After 1 hour make topping for bars (do not skip this step). Melt chocolate chips in sauce pan over medium/low heat, stirring constantly. Add pumpkin spice and stir some more. Allow chocolate to cool for about 1 min. Then place in a thick plastic produce bag or zip lock. Cut a small corner in the end of the bag and zig zag the topping over the bars. Don't be shy!
- Place back in the freezer for at least 5 min.
- Cut and enjoy.
Notes
Keep extra bars in the freezer.
