Oatmeal Chocolate Bars

  • 2 cups of thick rolled oats
  • ½ cup of raisins
  • ½ cup cacao/cocoa powder
  • ¼ cup sunflower seeds
  • ¾ cup dark chocolate chips
  • ¼ cup dried coconut flakes
  • 1 Tbsp. vanilla extract
  • 2 Tbsp. flax meal
  • 2 Tbsp. water
  • ¼ cup coconut oil
  • 1 cup dark chocolate chips
  • 1 Tbsp. pumpkin spice
  1. Preheat oven to 375°F.
  2. Line 9x9 Pyrex with parchment paper and set aside. Mix flax meal and water together in a small dish and set aside.
  3. In a food processor combine oats, raisins, coconut flakes, vanilla and coconut oil. Process until mixture starts to stick together. May need a little more oil (ours didn't).
  4. Pour mixture into a large bowl and add flax mixture, sunflower seeds and chocolate chips. Fold in while mixing with spoon.
  5. Scoop mixture into baking dish and flatten with hands. Bake for 25 min.
  6. Place baking dish in freezer for 1 hour to harden.
  7. After 1 hour make topping for bars (do not skip this step). Melt chocolate chips in sauce pan over medium/low heat, stirring constantly. Add pumpkin spice and stir some more. Allow chocolate to cool for about 1 min. Then place in a thick plastic produce bag or zip lock. Cut a small corner in the end of the bag and zig zag the topping over the bars. Don't be shy!
  8. Place back in the freezer for at least 5 min.
  9. Cut and enjoy.
Keep extra bars in the freezer.

      Hey guys, do you add the cacao in at the blender stage?

        Yes, the cacao should go in along with the other ingredients in the food processor. Let us know how they turn out :)
