Nutty Blueberry Waffles

Serves: 2-6
Waffle Ingredients:
  • 1½ cups brown rice flour
  • ½ cup rolled oats
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 Tbsp. flax meal
  • ½ cup fresh blueberries
  • 2 cups almond milk (might need more if batter gets thick)
  • 2 Tbsp. maple syrup
  • 2 Tbsp. coconut oil
  • 1 banana, sliced
  • Jimbo’s Almond Butter (others brands will work as well)

  1. Pre-heat waffle iron and coat really well with oil (we use coconut oil).
  2. In a small bowl mix flax with milk and set aside. Next combine flour, oats, baking powder and cinnamon, mix well.
  3. Now add remaining ingredients and stir until well combined. Should be a little thicker than pancake batter.
  4. Scoop out enough batter to cover bottom of waffle iron and cook according to waffle iron directions.
  5. Top with desired toppings.
