Nutty Blueberry Waffles

Ingredients
Waffle Ingredients:
- 1½ cups brown rice flour
- ½ cup rolled oats
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 Tbsp. flax meal
- ½ cup fresh blueberries
- 2 cups almond milk (might need more if batter gets thick)
- 2 Tbsp. maple syrup
- 2 Tbsp. coconut oil
Toppings:
- 1 banana, sliced
- Jimbo’s Almond Butter (others brands will work as well)
- fresh blueberries
- maple syrup
Instructions
- Pre-heat waffle iron and coat really well with oil (we use coconut oil).
- In a small bowl mix flax with milk and set aside. Next combine flour, oats, baking powder and cinnamon, mix well.
- Now add remaining ingredients and stir until well combined. Should be a little thicker than pancake batter.
- Scoop out enough batter to cover bottom of waffle iron and cook according to waffle iron directions.
- Top with desired toppings.
