No Bake Energy Bars

Ingredients
- 1 cup dark chocolate chips
- 1 tsp. coconut oil
- 1 cup + 2 Tbsp. pumpkin seeds
- 17 dates (pick soft ones)
- ½ cup dried coconut flakes
- ¼ cup water
- ½ cup + 2 Tbsp. sunflower seeds
Instructions
- In a food processor process pumpkin seeds, sunflower seeds and coconut flakes. Process until a ground powder, but not butter.
- Next add pitted dates and water, process until mixture starts to stick together.
- Place mixture in an 8x8 pan (or similar size) lined with parchment paper. Press evenly into pan.
- Place in freezer while you make topping.
- Melt chocolate and coconut oil in a double broiler or by holding sauce pan over burner but not directly on the heat as chocolate will burn or stick to pan. Stir frequently until all chocolate is melted.
- Spread chocolate sauce over the bars and place back in the freezer.
- Cut bars into 12 squares and enjoy.
- Keep in freezer until ready to serve.
