No Bake Energy Bars

Serves: 6-12
  • 1 cup dark chocolate chips
  • 1 tsp. coconut oil
  • 1 cup + 2 Tbsp. pumpkin seeds
  • 17 dates (pick soft ones)
  • ½ cup dried coconut flakes
  • ¼ cup water
  • ½ cup + 2 Tbsp. sunflower seeds
  1. In a food processor process pumpkin seeds, sunflower seeds and coconut flakes. Process until a ground powder, but not butter.
  2. Next add pitted dates and water, process until mixture starts to stick together.
  3. Place mixture in an 8x8 pan (or similar size) lined with parchment paper. Press evenly into pan.
  4. Place in freezer while you make topping.
  5. Melt chocolate and coconut oil in a double broiler or by holding sauce pan over burner but not directly on the heat as chocolate will burn or stick to pan. Stir frequently until all chocolate is melted.
  6. Spread chocolate sauce over the bars and place back in the freezer.
  7. Cut bars into 12 squares and enjoy.
  8. Keep in freezer until ready to serve.
