  • 1 package of nori sheets
  • 3 cups quinoa, cooked
  • 1 cucumber
  • 3 carrots
  • 2 avocados
  • 2 mangos
  • 1 package of sprouts (try alfalfa or onion)
Miso Sauce:
  • 1 Tbsp. miso paste
  • 2 Tbsp. tahini
  • 1 Tbsp. tamari
  • 1 tsp. ginger powder
  • water, as needed
  • wasabi or sriracha*
  1. In a mixing bowl combine all ingredients for miso dressing. Set aside.
  2. Next, chop your cucumber, carrots, mango and avocados into thin strips (the thinner the better). Take a sheet of Nori and face shiny side down.
  3. Layer your ingredients starting with the quinoa. Then add sprouts, cucumber, carrots, mango and avocado. Roll sushi up away from you and hold tight so ingredients don't fall out.
  4. Pour dressing over the top and then cut on perforated lines.
