Miso Ginger Nori Rolls

Ingredients
Rolls:
- 1 package of nori sheets
- 3 cups quinoa, cooked
- 1 cucumber
- 3 carrots
- 2 avocados
- 2 mangos
- 1 package of sprouts (try alfalfa or onion)
Miso Sauce:
- 1 Tbsp. miso paste
- 2 Tbsp. tahini
- 1 Tbsp. tamari
- 1 tsp. ginger powder
- water, as needed
- wasabi or sriracha*
Instructions
- In a mixing bowl combine all ingredients for miso dressing. Set aside.
- Next, chop your cucumber, carrots, mango and avocados into thin strips (the thinner the better). Take a sheet of Nori and face shiny side down.
- Layer your ingredients starting with the quinoa. Then add sprouts, cucumber, carrots, mango and avocado. Roll sushi up away from you and hold tight so ingredients don't fall out.
- Pour dressing over the top and then cut on perforated lines.
