Mini Polenta Pies

Ingredients
Pizza Pie Crust:
- 1 cup dry polenta
- 2 cups water
- 1 Tbsp. garlic powder
- ½ tsp. sea salt
Toppings:
- 1 jar of pizza sauce
- 1 can refried beans
- 1 tomato
- 2 green onions
- 1 avocado, chopped small
- ½ cup cilantro
Garnish:
- hot sauce
- nutritional yeast
Instructions
- In a medium saucepan bring water to a boil. Add polenta and stir continuously until a thick porridge consistency is achieved. Turn down to low and keep stirring for about 3-5 minutes. Remove from heat and allow to cool.
- Preheat oven to 425°F.
- Chop vegetables and prepare pizza sauce if making your own.
- Next lightly oil or line baking sheet with parchment paper.
- Using a ¼ or ⅓ measuring cup, scoop out polenta and place on sheet. Use back of cup or spoon to form into cakes. Make them as big or small as you want (we used ¼ and made 8 cakes).
- Place cakes in oven for 20 minutes. After 20 minutes remove cakes and top with pizza sauce and refried beans. Put back into the oven on broil for 3-5 minutes.
- Remove and top with desired toppings and garnishes.
