Millet Peach Porridge

Ingredients
Porridge:
- 2¼ cups coconut milk
- 1 cup millet
- 1 Tbsp. cinnamon
- 1 Tbsp. vanilla extract
- 2 peaches
Toppings:
- 3 Tbsp. coconut flakes
- 3 Tbsp. almond butter
Instructions
- Heat stove to medium and in a medium pot add coconut milk, cinnamon and vanilla. Bring to a boil.
- Add millet and peaches. Stir, turn down to low and cover. Cook for 20 minutes. If liquid absorbs, add more milk, 2 Tbsp. at a time.
- Remove from heat and divide among 2-3 bowls. Top each bowl with almond butter and coconut flakes.
