Ingredients
Marinade:
  • 1 lime, juiced
  • 1 Tbsp. maple syrup
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. water
Salad:
  • 1 sweet potato (cubed & baked)
  • 1 cup red cabbage
  • 4-6 kale leaves
  • 1 cup black beans
  • 1 cup corn (fresh or frozen)
  • 2 green onions
Garnish:
  • salsa
  • guacamole
  • lime wedges
Instructions
  1. Cook the sweet potatoes. Cut into ½" cubes, then toss with a little coconut oil, sea salt, and broil for 3-7 minutes on each side.
  2. Remove stems from kale and chop into small pieces. Then chop cabbage and green onions.
  3. Mix marinade ingredients together. Chop kale and place into a large bowl. Add marinade to bowl of kale and massage it together. Set aside. Add the rest of the salad ingredients to the bowl with the kale.
  4. Top with salsa, guacamole and lime wedges.
