Mexii Kale Salad

Ingredients
Marinade:
- 1 lime, juiced
- 1 Tbsp. maple syrup
- 3 Tbsp. apple cider vinegar
- 3 Tbsp. water
Salad:
- 1 sweet potato (cubed & baked)
- 1 cup red cabbage
- 4-6 kale leaves
- 1 cup black beans
- 1 cup corn (fresh or frozen)
- 2 green onions
Garnish:
- salsa
- guacamole
- lime wedges
Instructions
- Cook the sweet potatoes. Cut into ½" cubes, then toss with a little coconut oil, sea salt, and broil for 3-7 minutes on each side.
- Remove stems from kale and chop into small pieces. Then chop cabbage and green onions.
- Mix marinade ingredients together. Chop kale and place into a large bowl. Add marinade to bowl of kale and massage it together. Set aside. Add the rest of the salad ingredients to the bowl with the kale.
- Top with salsa, guacamole and lime wedges.
