  • 2 cups rice
  • 4½ cups water
  • 4 chard leafs
  • 2 tomatoes
  • ¼ of a red onion
  • 2 avocados
  • ½ cup tamari
Red Pepper Hummus:
  • 1 can garbanzo beans
  • ¼ cup tahini
  • 1 clove of garlic
  • ¼ cup of water
  • 1 Tbsp. olive oil
  • ¼ cup roasted red peppers, from jar
  1. Bring water to a boil in a medium sauce pan, add rice and stir. Cover and cook on low for 40 minutes.
  2. While rice is cooking, chop chard, tomatoes, red onions and avocados. Set aside.
  3. To make the hummus, drain and rinse beans. Add all ingredients to food processor and combine. Taste and adjust by adding salt or water if too thick for your taste.
  4. Once rice is done, split into 4 bowls.
  5. Top with a dash of the tamari, chard, tomatoes, onions, avocado and finish with a scoop of hummus.
