Ingredients
Bowl:
- 2 cups rice
- 4½ cups water
- 4 chard leafs
- 2 tomatoes
- ¼ of a red onion
- 2 avocados
- ½ cup tamari
Red Pepper Hummus:
- 1 can garbanzo beans
- ¼ cup tahini
- 1 clove of garlic
- ¼ cup of water
- 1 Tbsp. olive oil
- ¼ cup roasted red peppers, from jar
Instructions
- Bring water to a boil in a medium sauce pan, add rice and stir. Cover and cook on low for 40 minutes.
- While rice is cooking, chop chard, tomatoes, red onions and avocados. Set aside.
- To make the hummus, drain and rinse beans. Add all ingredients to food processor and combine. Taste and adjust by adding salt or water if too thick for your taste.
- Once rice is done, split into 4 bowls.
- Top with a dash of the tamari, chard, tomatoes, onions, avocado and finish with a scoop of hummus.
