- Nutritious – they’re super high in vitamins and minerals. These are practically the only potatoes we’ll eat and that you’ll find in our recipes.
- Filling – sweet potatoes are lower glycemic than white potatoes. They’re made up of complex carbohydrates, so they digest slower keeping you fuller for longer.
- Quick – from the time you start rinsing them, to the time you start eating, these will only take about 40 minutes to enjoy. By that time you can make AND eat a salad beforehand, which means your doing dishes/cleanup within the hour!

Sweet Potato Fries Recipe
Ingredients
2 sweet potatoes
1/4 cup pumpkin seeds
3 cloves of garlic
1 Tbsp. coconut oil
salt
pepper
oregano
basil
rosemary
thyme
Instructions
Preheat oven to 350°F.
Roughly chop pumpkin seeds and garlic.
In a large bowl combine pumpkin seeds, garlic & any combination of seasonings.
Cut sweet potatoes into 1/4 inch long slices. Start by slicing the potatoes length-wise into slabs, then cut off 1/4 fries from the slabs by cutting length-wise again.
Heat coconut oil and drizzle over fries making sure each fry is lightly coated. Toss fries in pumpkin seed/garlic mixture.
Place fries flat on baking sheet and bake for 35 minutes.
