We’ve got a Short & Sweet episode lined up for you today. We’re talking all about healthy lunches and how to make them happen on a consistent basis. Lunchtime is a struggle for so many of us because we get so caught-up in the am work period, but make the smart choice and plan ahead for it. When you start making healthy lunches a non-negotiable for you, you’ll see dramatic improvements in your afternoon productivity – guaranteed.

  • Why is lunch such a challenge?
    • It’s in the middle of the work-day. We forget to plan ahead and get too wrapped up in our projects. It’s easy to fall into lazy habits like eating out or just snacking through it.
  • How can we simplify it?
    • Find 3-4 healthy recipes and put them on rotation, week after week. This can last you months – just try not to eat them for dinner, otherwise you’ll get tired of them faster. Also try to limit the ingredients in your lunches and try to make them the night before while you’re making dinner – this is a HUGE time saver for us. Finally, try not to make lunches that require a recipe – it’s more complicated and your less likely to actually make it. New recipes are great, just save them for dinnertime :)
  • How to make time for it?
    • Plan for it and mentally prepare for a 30 minute break at 12pm. Try setting 2 alarms to help you wind down from your manic morning, one a half hour before and then one right at your stopping point. Lunch is more important than breakfast in terms of productivity – make sure to eat well and take a break for lunch so you can have a successful afternoon.
  • Why you should skip eating out & How to take charge when you do
    • Pass on eating out as much as possible for peak productivity. Eating heavy, convenience, pre-packaged foods at lunchtime will drain your energy more often than not. Eating out also takes away from your personal break-time, which should be a high priority as there’s often a lot of mental stimulation from the morning work period that should be diffused before heading into the afternoon.
  • Our personal favorites to have for lunch
    • Sarah likes green salads with avocado and tahini dressing. For the dressing she mixes tahini, lemon, miso and garlic. She also makes chickpea crepes, which are done in 10 minutes and are like bean bread. (see recipe links just below)
    • Peter likes salad with lettuce, quinoa, apple, walnuts and a sweet almond butter mustard dressing

      If not here is the recipe again:
      1 cup water
      1.5 Tbsp. olive oil
      1 1/2 cup garbanzo bean flour
      2 Tbsp. fresh rosemary
      2 Tbsp. nutritional yeast (optional)

      Place all the ingredients for the crepes into a blender and blend on high. You want the batter to be a little runnier than pancakes.Next lightly (not much at all) oil pan and pour 3/⁄4 of a cup of the crepe batter into the pan. Tilt the pan in a circle creating a thin crepe. Cook for 3- 4 minutes on each side. (should be golden brown when you flip it). The first one might not turn out, but stick with it as the rest always turn out perfect. Top with your desired toppings or eat on the side as bread!
