Grilled Veggie Pasta Salad

Serves: 2-4
  • 1 package pasta spirals
  • 2 japanese eggplant
  • 2 zucchini or summer squash
  • 1 red bell pepper
  • 2 carrots
  • ½ an onion
  • 2 Tbsp. olive oil
  • 1 tomato
  • 2 Tbsp. basil (fresh or dried)
  • 1 Tbsp. dried oregano
  • ½ Tbsp. red pepper flakes
  • salt and pepper to taste
  1. Slice eggplants, zucchinis and red bell pepper. Place them on the grill along with the carrots. Using a brush, brush on olive oil and top with dried oregano, salt and pepper. Grill on both sides for 3-6 minutes.
  2. Once vegetables are cooked remove from grill and set aside to cool.
  3. Cook pasta according to package directions. When pasta is finished, drain and rinse. Place pasta in large bowl.
  4. Chop tomatoes, basil and onions and add that to pasta. Add oregano, salt and pepper.
  5. Next chop your grilled vegetables and place those in pasta. Mix well top with salt, pepper and red pepper flakes. Add more oil if needed.
  6. Stir well and serve.
