Greek Salad

Serves: 2-4
Ingredients
Salad:
- 1 head lettuce
- 1 tomato
- ½ cup greek olives
- ¼ cup red onion
- 1 can artichoke hearts*
- ½ cucumber
Dressing:
- 4 Tbsp. balsamic vinegar
- 1 Tbsp. red wine vinegar
- ¼ cup fresh parsley
- ¼ cup fresh basil
- 1 Tbsp. dried oregano
Instructions
- Chop all ingredients for the salad and place in a large bowl.
- Place all ingredients for salad dressing in a food processor. Process until basil and parsley are roughly chopped (doesn't have to be completely combined).
- Pour dressing over salad and mix well.
- Serve immediately.
