Ingredients
Salad:
  • 1 head lettuce
  • 1 tomato
  • ½ cup greek olives
  • ¼ cup red onion
  • 1 can artichoke hearts*
  • ½ cucumber
Dressing:
  • 4 Tbsp. balsamic vinegar
  • 1 Tbsp. red wine vinegar
  • ¼ cup fresh parsley
  • ¼ cup fresh basil
  • 1 Tbsp. dried oregano
Instructions
  1. Chop all ingredients for the salad and place in a large bowl.
  2. Place all ingredients for salad dressing in a food processor. Process until basil and parsley are roughly chopped (doesn't have to be completely combined).
  3. Pour dressing over salad and mix well.
  4. Serve immediately.
