Grain Free Stuffed Strawberry French Toast

Ingredients
French Toast
- 1 cup garbanzo bean flour
- 1 Tbsp. flax seed meal
- 1 cup + 1 Tbsp. almond milk
- 1 Tbsp. tahini
- ¾ tsp. cinnamon
- 1 dash vanilla
- 1 dash nutmeg
- 2 Tbsp. maple syrup
- 1 cup fresh strawberries, sliced
Cold Strawberry Chia Jam
- 2 cups fresh strawberries
- 2 Tbsp. chia seeds
- 3 Tbsp. maple syrup
- 1 dash vanilla
Coconut Whipped Cream
- 1 can full fat coconut milk (placed in the refrigerator for at least 4 hours)
- 2 Tbsp. maple syrup
- 1 tsp. vanilla flavor
Instructions
Cold Strawberry Chia Jam
- If you don’t have any strawberry jam on hand, we suggest making some for this recipe. To make this “jam”, simply process ingredients in a food processor until desired consistency is reached.
Coconut Whipped Cream
- Make coconut whipped cream, or use store bought. We like the rice whip. Make sure you chill your coconut milk in the refrigerator for at least 4 hours, but overnight works well.
- Start by scraping out the top layer of the coconut cream, you only want the thick layer of fat. Save the watery portion for something else. Using a hand mixer, whip the coconut milk until it starts to get fluffy. Add the remaining ingredients and whip a little longer. We usually get mixed results when it comes to consistency. Sometimes it’s great and sometimes it’s watery. But don’t worry, it always tastes great. Set this in the refrigerator until you are ready to use.
French Toast
- For the “French Toast” mix the flour, flax, and spices together in a medium bowl. In another medium bowl, mix together the almond milk, tahini and maple syrup. Add the wet ingredients to the dry and stir well.
- Next, heat a lightly oiled frying pan to medium heat. Pour a large circle into the pan and gently rotate (like you would a crepe).
- Cook until edges start to solidify, then add a layer of strawberry jam and a few strawberries.
- Fold crepe in half, and cook for another 2-3 minutes. Repeat until all of the batter is used up.
- Top with more strawberries, maple syrup and coconut whipped cream.
