Ingredients
  • 1 package quinoa spaghetti
  • 2 cups vegetable broth
  • 4 cloves of garlic
  • 1 cup green beans
  • 3 Tbsp. white wine vinegar
  • ¼ cup parsley
  • ¼ cup nutritional yeast
  • 2 Tbsp. olive oil
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried basil
  • 1 Tbsp. red pepper flakes
  • 1½ Tbsp. miso paste
  • 1½ cup cooked white beans
  • dash of salt
  • dash of pepper
Instructions
  1. Chop garlic and place in a large sauce pan over medium heat. Cook with a dash of vegetable broth until it becomes fragrant.
  2. Next, stir in beans, wine, oregano, basil, red peppers flakes and vegetable broth. Cook for about 5 minutes.
  3. Next add miso paste, turn down to low and simmer. Cut green beans into bite-sized pieces.
  4. Cook spaghetti according to package directions in a large pot. 7 minutes before pasta is done toss in green beans to cook with pasta. Once cooked, drain green beans and pasta.
  5. Place pasta back into large pot and add the sauce into pot. Add olive oil, sprinkle with parsley, nutritional yeast, salt and pepper.
