Serves: 2-4
  • 1½ Tbsp. coconut oil
  • 1 red bell pepper
  • 1 onion
  • 1 can garbanzo beans
  • 1 Tbsp. garlic powder
  • 1 dash of pepper
  • ¼ cup brown rice flour
  • 1 dash of salt
  1. Chop bell pepper and onion and place in skillet with ½ Tbsp. coconut oil on medium heat. Cook until soft, about 5-7 minutes.
  2. Remove mixture from heat and allow to cool 1-2 minutes. Place mixture into food processor with drained & rinsed garbanzo beans and spices, pulse to combine. Add flour and process until well mixed. Shape mixture into 4 burgers.
  3. In large skillet lightly oil and turn to medium heat. Add burgers and cook until brown on each side, about 5 minutes.
  4. Serve burgers on buns, lettuce or just eat with your choice of condiments.
